The skinless peas from El Maresme have an excellent taste and texture, with a pronounced sweetness. Without a doubt, they are one of the jewels of our spring menu. We prepare the peas accompanied by lightly sautéed beans a la Catalana with bacon and black sausage, or garnished with artichokes, asparagus, onion, mint and black truffle oil.
