The tender beans from Josep Torrent's garden in Sant Feliu de Guixols are a true tiny culinary treasure. When spring arrives and the season starts, we send him the order in the morning, he picks the beans, removes them from the pod and that very same night we serve them in the restaurant. The peas never enter the refrigerator. This is a true farm to table product! We serve the beans accompanied by lightly sautéed peas a la Catalana with bacon and black sausage or in a salad with peas, artichokes, asparagus, spring onion, mint and truffle oil.
